I love pancakes, that being said, I often find that I am hungry an hour or so after eating them. I am not one for giving up on a food that delights me so much, so I challenged myself to find a pancake that could quench my hunger and satiate it it for more than a couple of hours.
I was successful!
I love a good wheaty pancake, but finding whole wheat flour in Korea can prove to be a challenge at times. I am not totally against white flour, but for the sake of fibre and keeping me full, I lean towards whole wheat flour. I knew that whole wheat flour was not going to be a player in this game, so I decided to sub in oatmeal instead. Mmmm….oats!
These have to be the easiest things to make. I have eaten these “oatmeal cookie pancakes” for my last three breakfasts. They even proved to be fast enough to make on a Monday morning…impressive eh?
I cooked mine up while I was enjoying my morning cup o’ coffee and they were ready to go when I was finished.
This recipe is perfect for one serving. (Measurements are approximate )
Flourless Oatmeal Cookie Pancakes:
- 3/4 cup oatmeal (you can blend in a blender to make it more like a flour, or leave as is)
- 1 Tbsp. ground flax seed
- 1 tsp. cinnamon
- 1/8 tsp. baking powder
- pinch of salt
Mix dry ingredients together.
- 2 egg whites beaten
- 1/4 cup of the milk of your choice
Whip up your egg whites and then add the milk. Stir in with the dry ingredients. Let stand for about 10 mins to let the oatmeal soak up some of the milk.
Heat up your pan and drop in your batter. Feel free to add in any other additions at this point; I put some frozen blueberries on top…any other fruit like apples, dried crans or raisins would be great as well. This makes me about 3 good sized “cookies.” Cook as you would a regular pancake.
Top with your favorite fruit, nuts, jams etc. and get ready to be amazed.

For those of us who get hunger pangs throughout the day, more often then we would like to admit, give these guys a try and they may help. The combination of the protein from the egg whites and the good fibre from the oats, really helps in keeping your tummy happy 🙂

Love it! For even more protein, my go-to pancakes are equal parts oatmeal, egg whites, and cottage cheese (with a pinch of baking powder and cinnamon thrown in.) mmm, pancakes 🙂

But yes, the pancakes would be great without it I’m sure. I just add it in for some extra oomph!

Thanks so much for this recipe. I’m doing WW and am always trying to find lower point ways to make things. I really love these. My only change is I used a little more milk, and I use Salba instead of Flax seed! Talk about filling!
